Easter Bunny Cake Pops

Since it was the time of year for all things Easter, the next choice after making chick cake pops and Easter egg cake pops was Easter Bunny cake pops.  I really had a fun time making these!

I made the pops in an egg shape.  Some I dipped in white candy coating, others I dipped in pink candy coating.  Again, all were going to become Easter Bunny heads!

I used a red velvet cake mix, but added about 1/2 cup of high fat Dutch process cocoa to it.  I like my pops to have a strong flavor since they are such small treats!  These were very chocolaty- yum!  You can see how pretty the intense red looked inside the pink and white coated pops.  Click on the image to get a much bigger look!

Okay, these were so incredibly easy to make that I didn't take pics of the assembly process.  I trimmed the tips off of pastel candy corn and used extra melted candy coating to glue the ears on.  I made swirls of 'hair' between the ears to camouflage extra candy coating there.  The nose was a glued on candy heart.  The eyes and mouth were drawn on with edible ink pens. One has glued on pre-made sugar eyes, as you can see in the pic.  It just made the cake pop look creepy to me.  So I didn't bother making any more than that one.
I liked to try to coordinate the eye colors with the ear colors.  Except for the pink-eared bunnies, for them I made the eyes blue.
I really had fun making the different faces on these guys!  Bakerella (the amazing woman who came up with the cake pop concept) makes a certain style of eyes.  They're cute, but I really like making my own style of eyes on the pops.  And I enjoy giving them all expressions of their own.

Here are the pink bunnies!  As you can see, I began running in my own direction with the faces.  I like adding eyebrows to enhance their little faces.
And I began giving their mouths expressions, too.  Kind of like they have something interesting to say.

I also liked the contrast between the red nose and the green eyes/ears.

Here is the whole batch of completed bunny heads!
